Wondering what to cook for dinner? Here is my quick fix for tonight.

Dinner in 20  inutes

For The Rice

I used my best rice cooker.

  • 2 cups of rice (serves 6)
  • 3 cups water.
  • A pinch of salt.
  • A pinch of cumin powder (optional).
  • A tablespoon of cooking oil.

Wash the rice and put in the rice cooker, add the water, salt, and oil. Stir and cover with the lid. Now switch-on the cook function. It will be ready in 15 minutes. That’s the beauty of technology.

 

For The vegetables

I used my best rice cooker. – It comes with a steamer compartment.

  • Carrots.
  • Snow peas.
  • Broccoli – white & green.
  • French beans.
  • Red cabbage (some call it purple cabbage).

Adjust the quantities depending on how many people you will be cooking for.
Wash the vegetables thoroughly and drain using a colander.
Place them in the steamer and steam for 3-5 minutes (depending on how crunchy you love your vegetables.)

Tip

I steam my vegetables while cooking the rice. Just place them when the rice starts boiling and remove them once tender.

Now heat a tablespoon of butter in your shallow frying pan (Adjust the butter depending on the amount of vegetables you steamed.)
Stir fry the vegetables for another 3-5mins till they release some aroma but are still crunchy.
These need to be served hot so stir fry once everything else is ready.


 

For The Beef Stew

I used my best iPot

  • ½ kg meat.
  • 2 tomatoes.
  • 1 onion.
  • 2 cloves of garlic.
  • 1 tablespoon cooking oil.
  • A pinch of salt.
  • Half a teaspoon of your favorite mix of spices (Not more than this).
  • Red Chili flakes (optional).
  • 1 cup water or broth.

 

Wash the meat and cut into cube sized bites. Put in the iPot, add tomatoes, onions, garlic, a tablespoon of cooking oil, salt, your favorite spices and a cup of water. Cover and switch-on the iPot.

The stew will be ready in 10-15 minutes (This depends on how tender you love your meat. In 15 minutes, the meat will be falling off the bone).

Now open the iPot and add Coriander. The stew is now ready to serve.
